Crock pot Chicken Fajitas!

What you need:

Peppers (cut up peppers of your choice. I usually do 2 reds 2 yellow)

Onion (how much you desire)

1 cup of chicken broth (or enough to cover chicken)

Lime juice (optional)

Chili powder

Salt

What to do :

Place everything in crock pot and forget about it :). I use about 3-4 boneless chicken breasts. (Makes 3-4 small servings). I cut up the peppers, and onions and toss them in. I sprinkle chili powder on top of it all. I salt it to taste, and then I pour chicken broth over the top of it all (enough to cover it). I leave on high for 3-4 hours. Also can leave on low for 6 hours.

When it is finished I cut up the chicken breasts, and eat with tortilla shell and spanish rice! Easy dinner!

Crock-pot Baked Potatoes

This idea is so great! Sometimes I bake chicken or pork chops and just want a quick side. This is something that is easy,and mess free.

Crock-Pot-Baked-Potatoes-2

  1. Wash your potatoes well and let them dry.  Then wrap each potato in a piece of foil (no need for pricking them).
  2. Place the foil wrapped potatoes in your crock pot.  I put 8 medium sized potatoes in my 4 quart crock pot, but I probably could have fit at least 10.
  3. Cook on low for 8 hours.

I’m making June crock-pot month!

I love using my crock-pot. I use it a few times a week. It is lovely coming home to a yummy smelling dinner that I didn’t spend hours slaving over. I have found some wonderful recipes latley,and all June I’m going to share them with you! 🙂 Make sure you send me your favorites,and I’ll be sure to post them,and try them!
